Watermelon-Cucumber Salad

Light, juicy, and amazingly refreshing, this cool salad is just the thing to serve outside on a scorching summer day.

Ingredients

  • 6 c. diced watermelon
  • 3 Persian Cucumbers
  • 3 tbsp. olive oil
  • 3 tbsp. red wine vinegar
  • 1 tsp. Sea Salt
  • 1 tsp. pepper
  • ¼ c. Crumbled feta
  • ¼ c. mint leaves

Directions

  1. In a large bowl, combine watere­melon, cucumbers, olive oil, red wine vinegar, sea salt, and pepper; toss to combine. Divide between salad plates and garnish evenly with crumbled feta and mint leaves.
